Mango & Tomato Salad

This salad was inspired by a classic fruit salsa recipe.


Ingredients:
3 ripe tomatoes
1 large mango
1 small red onion
1/2 English cucumber
1/2 orange bell pepper
1/2 red bell pepper
1/4C cilantro (or cilantro & fresh mint)
extra virgin olive oil
red wine vinegar (or Mango Chili Vinegar)
salt & pepper

Directions:
Slice the tomatoes into wedges, then slice the cucumber and onion very thin and add them to a salad bowl. Dice the peppers and mango and add them to the bowl, then sprinkle with chopped cilantro.

Note on Dressing a Salad:
For the dressing I do not premix, but drizzle the olive oil onto the salad, add salt and freshly ground black pepper, then mix thoroughly. The last thing I add is the vinegar in an amount equal to the olive oil. This may seem too acidic, so I recommend that you adjust to your personal preference. I have found that adding the vinegar first makes it difficult for the oil to cling to the salad leaves (in this case, the fruits and vegetables).
