Peach Amaretto Jam

Once again inspiration came from fruit on hand. My peach tree started dropping fruit while I was busy making plum jam and marmalade, so this recipe was developed to use the semi ripe and decidedly tart peaches. Waste not, want not.


Ingredients:
4C peaches
3C red Mariposa plums
5 1/2C sugar
1 large lemon
2t almond extract
1/2 pkg Sure Jell Pectin



Directions:
Peel, pit and pulse peaches in a food processor, add roughly chopped plums that have been pitted and mix together with the peaches. Heat over medium high heat and add the sugar and juice of one large lemon, then stir in and bring to a rolling boil. Reduce heat and gently boil until the jam has reduced by 1/5, add in the almond extract, stir, then add the pectin and boil for one more minute. Turn off heat and pack into sterilized jars. Place in a water bath or steam bath for 10 minutes.
