Balsamic Cranberry Sauce

I've been making Balsamic onions for years now and have been increasingly adding fruit to them with great success. I thought it might be nice to try combining balsamic with cranberries for a different sort of relish for a traditional Thanksgiving dinner. After all, cranberry sauce is a sweet/tart flavor to begin with. This recipe layers flavor upon flavor and creates a more complex condiment. Balsamfrutta also makes an orange flavored balsamic which I'll try in this recipe another time.


Ingredients:

1 3C bag of fresh cranberries
1C balsamic vinegar
2C sugar
1/2C fresh squeezed orange juice
grated zest from 1 medium orange
1/4C Balsamfrutta brand strawberry balsamic

Directions:

Combine the 1st cup of balsamic and the sugar in a saucepan over a medium high heat, then add the orange juice once the syrup starts boiling.

After 5 minutes of brisk boiling add the cranberries and when the skins start popping and the fruit is breaking down add the orange zest. Cook down for another 5 minutes and add the strawberry flavored balsamic, then cook another 5 minutes and place in 3 half pint canning jars that have been sterilized. Process in a boiling water bath for 15 minutes.

This recipe makes only 1 1/2 pints of cranberry sauce.
