"Fig's" Wonton Cup

Every year during the holidays I try to create one really unique appetizer and this was the runner up for 2007. We had traveled to Boston in October and went to Fig's Restaurant for our favorite pizza that was composed of balsamic glazed figs, Gorgonzola and prosciutto. As I looked at it I was trying to visualize the main ingredients used in another way. This is what I managed to put together.



Ingredients:
wonton cups (wonton wrappers & olive oil)
balsamic fig jam (recipe listed under condiments)
prosciutto
Gorgonzola
Mascarpone

Directions:

Wonton cups look fancy but take little effort. Just brush with olive oil on both sides (brush on a small amount of oil and rub it into the wonton skin), place into a mini muffin pan and bake at 375 degrees for a few minutes until they start turning color. Since many I make are used for fillings that need to be reheated, it is important that they are baked very lightly. The cheese filling is made of equal parts of Gorgonzola and Mascarpone cheeses mixed together. Bring them to room temperature before starting to mix them together.

Place a scoop of the cheese filling into the wonton, add some balsamic fig jam (a commercial fig jam with a commercial balsamic glaze could be substituted) and top with a piece of prosciutto. Plate and serve.
