Goat Cheese Spread

Once when developing some appetizers, I realized that goat cheese doesn't spread well, or at least is doesn't look good if spread. That prompted me to reinvent it for that purpose. Now I have a richer tasting, more spreadable cheese that not only looks better, but tastes better.

Ingredients:
4 oz. mild goat cheese
4 oz. mascarpone cheese
half and half (or cream)

Directions:

Bring the cheeses to room temperature and mix in a bowl with a fork. When the cheeses are thoroughly blended, add a small amount of the half and half to thin them out slightly. Now you can spread it on crackers with a garnish or use in phyllo cups as I did in the photo above. Many garnishes can be added including honey, chopped dried fruit, nuts, preserves, etc.
